Barcelona Cuisine - Seafood Paella


Here's what you'll need to create this mouthwatering Seafood Paella:

  • 340g white Spanish bomba rice

  • 4 large prawns (with shells on)

  • 200g mussels

  • 200g clams

  • 1 cuttlefish or squid

  • 1 liter fish stock

  • 1 clove of garlic

  • 1 onion

  • 3 tomatoes

  • Paprika (to taste)

  • 100g green beans

  • 100g fresh peas

  • Saffron (a few threads)

  • Salt (to taste)


Before we start cooking, we need to get all our ingredients ready:

  1. Prep the Vegetables

  2. : Peel and finely dice the onion and garlic. Grate the tomatoes and set everything aside.

  3. Seafood Prep

  4. : Cut the cuttlefish or squid into square pieces. Clean the mussels and clams thoroughly.

Cooking Instructions

Now that we have everything prepped, let's start cooking!

  1. Heat the Pan

  2. : In a paella pan or a large heavy-based frying pan, heat some oil over medium heat.

  3. Cook the Prawns

  4. : Sauté the prawns for about a minute until they turn pink, then set them aside.

  5. Sauté the Squid

  6. : In the same pan, add the cuttlefish or squid and cook until they brown.

  7. Add Aromatics

  8. : Toss in the diced onion and garlic, and cook until they are lightly browned and fragrant.

  9. Vegetables

  10. : Add the green beans and peas, and cook for about 2 minutes.

  11. Tomatoes

  12. : Stir in the grated tomatoes and cook until the tomato water evaporates, creating a rich base.

  13. Rice and Seafood

  14. : Add the rice, mussels, clams, and a sprinkle of paprika. Cook for a minute, making sure everything is well mixed.

  15. Add Stock and Saffron

  16. : Pour in the boiling fish stock and add a few threads of saffron. Stir well.

  17. Cook the Rice

  18. : Increase the heat to high and cook for 5 minutes. Then, lower the heat and let it simmer for an additional 10 minutes.

  19. Finish with Prawns

  20. : About 3 minutes before the rice is done, add the prawns back into the pan.

  21. Rest

  22. : Once cooked, let the paella rest for about 3 minutes before serving.
