  • 500 ml whole milk

  • 4 large egg yolks

  • 100 g granulated sugar (plus extra for caramelizing)

  • 1 tablespoon cornstarch

  • Zest of 1 lemon

  • Zest of 1 orange

  • 1 cinnamon stick


  1. Heat milk with lemon zest, orange zest, and a cinnamon stick until it simmers. Let it steep for 15 minutes.

  2. Whisk egg yolks, sugar, and cornstarch until smooth.

  3. Strain the infused milk into the egg mixture. Cook over low heat until thickened.

  4. Pour into ramekins and refrigerate for at least 2 hours.

  5. Sprinkle sugar on top and caramelize with a kitchen torch or under a broiler.
